    This creamy, velvety Alfredo Cottage Cheese Sauce will elevate even the simplest of meals, from roasted veggies to grilled chicken. And because it's made with cottage cheese, it's higher in protein than traditional Alfredo sauces.

    Why We Love This Alfredo Cottage Cheese Sauce

    • With 13 grams of protein per half cup, it adds a nice protein boost to your veggie sides. Regular alfredo sauce has around 5-6 grams of protein per half cup.
    • There's no heavy cream, and overall, less fat than in traditional Alfredo sauces, but it tastes just as decadent!
    • When drizzled on veggies, the cheesy, creamy texture will make even the pickiest of eaters forget they're eating healthy!
    • Blood-sugar friendly: low-carb with a protein boost.
    • You can enjoy it at room temperature or heated.

    Ingredients for Alfredo Cottage Cheese Sauce

    • Cottage Cheese replaces some of the Parmesan cheese and heavy cream in traditional Alfredo sauce, making this version more nutrient-dense.
    • Grass-Fed Butter for silkiness and richness. We choose grass-fed butter because pasture-fed animals have an improved nutritional profile over corn-fed animals and can provide more omega 3 and 6 fatty acids, which are heart-healthy.

      Replace with olive oil if you prefer the flavor.
    • Onion for depth of flavor.
    • Garlic - preferably fresh.
    • Dried Oregano gives the sauce a savory, earthy flavor.
    • Parmesan Cheese - for a rich, salty, umami flavor.

    • Mozzarella Cheese for melty goodness and to add body. We prefer grating block cheese to avoid any fillers in pre-shredded cheese, but do what's convenient for you.
    • Milk to thin out the consistency. Non-dairy milk is fine.
    • Dijon Mustard for a tangy, sharp, and slightly spicy edge.
    • Nutmeg is optional, but add it if you want a little bit of warm sweetness.
    • Salt and Pepper
    • Parsley as a garnish for color and freshness.

    How to Make Alfredo Cottage Cheese Sauce

    1. Heat the butter in a skillet over low heat.
    2. Add the diced onion to the skillet and cook gently until soft and translucent.
    3. Add the garlic and oregano to the skillet and sauté until fragrant, being careful not to burn the garlic (about 1 minute).

    1. Remove skillet from heat and allow onions and garlic to cool.
    2. Place the remaining ingredients in the base of a mini blender or a regular blender. You can also use an immersion blender. (affiliate links)
    3. Add the cooled onions, garlic, and oregano to the sauce.
    4. Pulse until completely smooth.
    5. Consume the sauce at room temperature or transfer the mixture to a saucepan and heat over medium-low heat just until just warm (do not bring to a simmer or boil as it may cause the sauce to separate).
    6. Remove from heat and enjoy over roasted or spiralized veggies, chicken breasts/thighs, or meatballs.

    Common Questions

    Do I have to heat the Alfredo Cottage Cheese Sauce?

    Not at all! Alfredo Cottage Cheese Sauce can be served at room temperature or gently heated in a saucepan until warm. When served over hot food, the room-temperature sauce will warm slightly and melt onto the food.

    How should I store the sauce?

    Transfer leftover sauce to an airtight container and refrigerate for up to 4 days. We do not recommend freezing the sauce as the cottage cheese may separate once thawed.

    What is the best way to reheat the Alfredo Cottage Cheese Sauce?

    Pour the sauce in a small saucepan set over medium-low heat. Stir constantly until warm, adding a little milk as necessary to thin the sauce. Avoid simmering or boiling the sauce as it will separate (which will not affect the flavor, but the sauce won't have a smooth consistency if it boils).

    What are some blood sugar-friendly ways to serve Alfredo Cottage Cheese Sauce?

    Alfredo cottage cheese sauce is delicious served over a side of roasted veggies (think cauliflower, broccoli, or cabbage steaks), spiralized zucchini noodles, or spaghetti squash.
