- 10 ounces Yukon Gold potatoes 2 medium, peeled and finely diced
- 12 ounce cauliflower ¼ of a large head, stem attached or one bag frozen riced cauliflower
- 1 pound 93% lean ground chicken
- 16 ounces cottage cheese
- ½ teaspoon Diamond Crystal Kosher Salt
- Freshly ground black pepper
- ¾ cups shredded cheddar cheese
- 2 tablespoons chopped scallions for garnish
