- 1 red onion sliced into 1-inch pieces
- 2 cups cauliflower rice
- ½ cup black beans rinsed and drained
- 2 cups baby spinach uncooked, packed
- 1 avocado small, sliced
- 2 teaspoon olive oil divided; spray oil works too.
- 1 teaspoon Diamond Crystal kosher salt divided
Instructions
- Preheat oven to 475°F.
- Prepare the Chipotle Salad Dressing With Greek Yogurt
