If you’re craving a crunchy, toasty breakfast topping that’s grain- and sugar-free, but big on flavor, this Gluten-Free Granola is a game changer. Unlike store-bought granolas, this version skips the oats and uses heart-healthy nuts, seeds, and unsweetened coconut for a naturally satisfying crunch.

Photo of gluten free granola served over plain Greek yogurt with a jar of granola in the background.

And, since it is lightly sweetened with allulose, it delivers the golden, caramelized flavor you love without the blood sugar spike — making it perfect for anyone watching carbs or avoiding refined sugars. Allulose and butter melt together to form irresistible little crunch clusters that will elevate your breakfast and snacking options.

    Why We Love Gluten-Free Granola

    • Blood sugar friendly: Made with allulose instead of sugar or honey, so it won’t spike blood glucose or insulin levels.
    • Nutrient-dense: Packed with nuts and seeds that deliver healthy fats, plant-based protein, and satisfying texture.
    • No grains, no gluten: Completely oat-free and naturally gluten-free — perfect for low-carb and gluten-sensitive eaters.
    • Good protein-to-carb ratio: Each serving has 4 grams of protein to 8 grams of carbs. Read our article about how a good protein-to-carb ratio helps with insulin resistance.
    • Deliciously toasty flavor: Melted butter and allulose combine to create perfectly toasted little clusters.
    • Perfect crunch: Bakes up golden and crisp.
    • Customizable: Easy to mix in your favorite extras like cinnamon, vanilla, or your choice of nuts and seeds.
    • Stays fresh: Keeps its crunch for weeks, making it ideal for quick grab-and-go breakfasts and snacking.

    Ingredients for Gluten-Free Granola

Photo of ingredients for Gluten Free Granola, including pecans, grass fed butter, raw sunflower seeds, salt, unsweetened coconut flakes, slivered almonds, sunflower seeds, and allulose.
    • Seeds (sunflower & pumpkin) – Deliver crunch, plant-based protein, magnesium, and healthy fats that support steady blood sugar and lasting energy.
    • Nuts (almonds & pecans) – Add satisfying richness, fiber, and heart-healthy fats that promote fullness and a crisp, toasty crunch.
    • Unsweetened coconut shavings –For natural sweetness, loads of flavor, and nourishing medium-chain fats, which have been shown to lower bad cholesterol.
    • Allulose – A zero-sugar sweetener that browns beautifully without raising blood sugar. We like the Now organic brand (affiliate link).
    • Grass-Fed Butter – Helps bind the mixture and provides a rich, caramelized flavor.
    • Salt – Balances sweetness and amplifies the overall flavor.

How to Make Gluten Free Granola

    1. Preheat oven to 325°F (165°C) and line a large baking sheet with parchment paper.
    2. Combine dry ingredients — sunflower seeds, pumpkin seeds, coconut, almonds, pecans, and salt — in a large mixing bowl.

    1. Melt and mix — In a small saucepan, melt the butter. Stir in allulose until combined. Add vanilla or cinnamon if using.
    2. Combine everything — Pour the butter and allulose mixture over the dry ingredients. Stir until everything is evenly coated.
    3. Bake for 18-22 minutes, stirring once halfway through, until golden brown and fragrant.
    4. Cool completely before breaking into clusters. The granola crisps up as it cools.

    Common Questions

Can I skip the butter and make this vegan?

Absolutely! You can replace the butter with equal parts unrefined, cold-pressed coconut oil.

Can I customize the nuts and seeds?

Of course! Simply replace with nuts and seeds of your choosing in equal parts.

I don't like coconut. Can I leave it out?

Certainly, you can omit the coconut altogether or replace it with other seeds or nuts.

What is the best way to store gluten-free granola?

First, make sure the granola has cooled completely. Once cooled, place the granola in an air-tight container such as a glass jar with a tight-fitting lid. Use the following guidelines:
Room temp (cool, dry place): Up to 2 weeks.
Refrigerator (airtight container): Up to 1 month — stays crisp if fully sealed and cooled before storing.
Freezer: Up to 3 months — thaws crunchy and fresh.
