    Ingredients for our Healthy Buffalo Chicken Dip

    Each ingredient in this recipe was chosen to support steady blood sugar, satiety, and metabolic health, while still delivering classic buffalo chicken dip flavor.

    • Lean shredded chicken breast – Higher in protein and lower in fat than chicken thigh, helping promote fullness and stable blood sugar. Tip for Easy Shredded Chicken: Place three chicken breasts in a shallow pot. Add water to cover by an inch. Season with salt, pepper, and garlic powder. Cook over medium heat and gently simmer until chicken is fully cooked to 165°F (take internal temperature with an instant-read meat thermometer). Shred chicken with two forks.
    • Low-Fat Cottage Cheese – A high-protein, low-glycemic dairy option that replaces the ranch dressing and some of the cream cheese for a lighter, blood sugar-friendly base.
    • Cream Cheese – Adds richness and creaminess; using a modest amount keeps saturated fat in check.

    How to Make Healthy Buffalo Chicken Dip

    1. Sauté the Onions: In a small skillet over medium heat, sauté the diced onions with the garlic powder and smoked paprika until softened and fragrant. This should take about 2–4 minutes.
    2. Blend the Base: Add the cottage cheese, cream cheese, salt, pepper, and sautéed onion mixture to a food processor. Blend until completely smooth.
    3. Combine: Transfer the blended mixture to a large bowl. Stir in half of the shredded cheese and all of the shredded chicken until evenly combined.
    4. Bake: Spread the mixture into a lightly oiled baking 8X10, oven safe baking dish (affiliate link) and top with the remaining shredded cheese. Cover with foil and bake at 375°F for 20–25 minutes, until hot and bubbly. Optionally, remove foil and broil for 2-3 minutes for a golden crust (watch carefully to prevent burning).

      Everytime I make this for a dinner party, there's none to take back home. Everyone says it's delicious and they'd never know that cottage cheese is a part of the recipe. I like a little extra buffalo sauce!
