- Boneless, Skinless Chicken Thighs or chicken breast sliced into thin strips
- Red Bell Pepper or any other color bell pepper of your choice.
- Red Onion - I like the sweetness of red onion, but yellow or white onion also works.
- Cumin Powder, Garlic Powder, and Chipotle Powder (affiliate link) (or regular Chili Powder) - this mix of spices imparts an authentic Mexican flavor that pairs well with the other ingredients in this recipe.
- Kosher Salt - my preference is Diamond Crystal Kosher Salt, (affiliate link) which is less salty than other kosher and table salts, so please adjust accordingly if you substitute.
- Extra-Virgin Olive Oil - This healthy fat is not only a great flavor complement, but it also helps the spices adhere to the chicken and vegetables, and promotes browning.
- Optional garnishes: sliced jalapeños, scallions, or avocado slices, and a dollop of Greek yogurt.

- Preheat the oven to 475°F
- Combine the spices and salt into a small bowl and set aside.
- Slice the pepper and onion into strips.
- Slice the chicken into strips.
- Transfer the chicken and vegetables to a non-stick sheet pan (affiliate link) or a sheetpan lined with parchment.
- Pour the olive oil over the chicken and vegetables; toss to coat.
- Sprinkle the mix of spices and salt over the chicken and vegetables; toss to coat.
- Bake for 20 minutes or until an instant-read meat thermometer (affiliate link) inserted into the chicken reads 165°F or more.

Absolutely! We think mushrooms and zucchini would be good substitutions as they pair nicely with the spice mix.
Yes, you can use steak, also cut into strips. We like flank, skirt or sirloin thinly cut into strips and cooked the same way as the chicken. We also like using shrimp, however, to keep them from overcooking and becoming tough, cook the seasoned vegetables alone for 12 minutes, then add the seasoned shrimp and cook for another 8 minutes.
They'll keep 3-4 days in an airtight container.
Place the chicken and vegetables in a skillet and cook until heated through. You can also reheat them in the microwave on a covered microwave-safe dish, adding about a teaspoon of water to keep them from drying out.

When I eat at a Mexican restaurant, fajitas are usually my first choice because I can easily adjust the meal to be glucose-friendly. A glucose-friendly meal does not promote insulin resistance and has a good protein-to-carb ratio. You can read about what a good protein-to-carb ratio is here.
I'll ask the waiter if I can have double the peppers and onions instead of the rice and beans, and if I do have a tortilla, I might have one corn tortilla. Or, two corn tortillas max, which would provide another 20 grams of carbs total and still keep a good protein-to-carb ratio.
