Traditional baked pasta dishes are often heavy in refined carbohydrates and lower in protein. Our version is different:

- Chickpea pasta – naturally higher in protein and fiber than traditional pasta or other gluten-free pastas. The added fiber helps slow digestion and supports a steadier blood sugar response.
- Lean Ground Beef – helps increase protein density without excess saturated fat.
- San Marzano Canned Tomatoes are naturally sweet, lower in acidity, and have a low-water content, which means we can achieve deep flavor without needing to simmer for hours.
- Cottage Cheese and Egg – This mixture creates a creamy layer similar to ricotta but with significantly more protein. The egg helps bind the layers during baking.
- Olive Oil – A source of heart-healthy monounsaturated fats that support satiety and overall metabolic health.
- Bay Leaves and Dried Basil for that traditional Italian flavor we all crave.

Ingredient Swaps and Substitutions for Low-Carb High-Protein Pasta Bake
- Ground turkey or chicken may be used instead of beef.
- Ricotta can replace cottage cheese, though protein will be slightly lower.
- Fresh basil may replace dried basil (stir in at the end).
- Grated Pecorino Romano may substitute for Parmesan.
Why Chickpea Pasta Works Here

Instructions for Low-Carb High-Protein Pasta Bake
- Cook the pasta just shy of al dente. Drain, rinse, and set aside.
- In a second pot, saute the onions until translucent, and then add the garlic.
- Add the lean ground beef, salt, and pepper.
- Stir in tomato paste.
- Add the whole tomatoes, crushing them gently with your hands as you add them to the pot. Stir in bay leaves and dried basil.
- Reduce heat to low, cover, and simmer for at least 30 minutes.
- In a separate bowl, mix cottage cheese, egg, salt, pepper, and grated Parmesan until smooth.
- Preheat oven to 375°F.
- In a rectangular glass baking dish, layer:
- A thin layer of sauce
- Half the pasta
- Half the cottage cheese mixture
- Add more sauce
Repeat layers, finishing with sauce on top. - Sprinkle lightly with shredded mozzarella.
- Bake 20-25 minutes uncovered and rest for 10 minutes before serving.

Low-Carb High-Protein Pasta Bake
Ingredients
Bolognese Sauce
- 8 oz Banza chickpea pasta we used rigatoni; Cavatappi would also work well
- 1 lb lean ground beef
- 2 tablespoons olive oil
- ½ large onion diced
- 3 large cloves garlic finely chopped
- 1 tablespoon tomato paste
- 28 oz can whole tomatoes in juice San Marzano (prefferably)
- 2 bay leaves
- ¾ teaspoon dried basil
- 2 teaspoon Diamond Crystal kosher salt
- ¼ teaspoon black pepper
Cottage Cheese Layer:
- 1½ cup full-fat cottage cheese
- 1 large egg
- 2 tablespoons grated Parmesan
- ½ teaspoon Diamond Crysal kosher salt see notes
- ½ teaspoon black pepper
Topping:
- ½ cup shredded mozzarella
Instructions
Cook the Pasta
- Bring a large pot of salted water to a boil. Cook chickpea pasta 1–2 minutes shy of al dente. Drain and rinse briefly with cool water. Set aside.8 oz Banza chickpea pasta
Make the Bolognese Sauce
- Heat olive oil over medium-low heat in another large pot. Add diced onion and sauté until translucent, about 3 ½ minutes.2 tablespoons olive oil, ½ large onion
- Add garlic and sauté about 2 minutes, stirring constantly to prevent burning.3 large cloves garlic
- Raise heat to medium and add ground beef. Season with kosher salt, pepper, and basil. Break up the meat and cook until fully browned.1 lb lean ground beef, ¾ teaspoon dried basil, ½ tsp Diamond Crysal kosher salt, ½ tsp black pepper
- Stir in tomato paste and toss to coat the beef . Cook 1-2 minutes to deepen the flavor.1 tablespoon tomato paste
- Add whole tomatoes, crushing them gently with your hands as they go into the pot. Stir in bay leaves.28 oz can whole tomatoes in juice
- Lower heat to low. Cover and simmer for 30 minutes, stirring every 10 minutes to keep the sauce from burning.
- Take out the bay leaves.2 bay leaves
- Remove the sauce from the heat and keep covered until ready to use.
Mix Cheese Layer
- While the sauce simmers, mix cottage cheese, egg, Parmesan, salt, and pepper in a bowl until combined.2 tsp Diamond Crystal kosher salt, ¼ tsp black pepper, 1½ cup full-fat cottage cheese, 1 large egg, 2 tablespoons grated Parmesan
Assemble and Bake
- Preheat oven to 375°F.
- In a rectangular, 13x9 casserole dish, layer:
- Thin layer of sauce over the bottom of the casserole dish
- Half the pasta
- Half the cottage cheese mixture
- Sauce
- Repeat layers, finishing with sauce on top.
- Sprinkle mozzarella evenly over the top.½ cup shredded mozzarella
- Bake uncovered for 20–25 minutes until bubbly and set.
- Let rest 10 minutes before slicing.
