If you're looking for a simple, flavorful, high-fiber vegetable side dish to help you manage your blood sugar levels, this Roasted Broccoli and Cauliflower recipe is for you.

High-fiber and non-starchy vegetable dishes, such as Roasted Broccoli and Cauliflower, help manage blood sugar levels. These veggies have a good amount of fiber and are considered low-carbohydrate. This combination helps slow down the conversion of carbohydrates in a meal into blood sugar, thereby reducing blood sugar spikes.

Since our goal at Buena Wellness is to help people with insulin resistance, pre-diabetes, and diabetes manage their blood sugar and insulin levels, this easy recipe is an ideal side dish.

Why We Love Roasted Broccoli and Cauliflower

    • Roasting vegetables at a high temperature (in this case, 450°F) enhances their flavor and texture. You get crispy, caramelized bits that taste almost nutty.
    • Versatile - keep it simple, or add spices and herbs to pair with the rest of your meal's flavor profile.
    • Easy to batch cook - great for meal prep, reheats well, and pairs with lean proteins for balanced meals.
    • A lower-carb swap - a healthy replacement for starchier sides like potatoes, rice, or pasta. One serving only has 4 grams of carbs and 60 calories.
    • Supports stable blood sugar – low glycemic index and fiber help manage blood sugar levels.

Ingredients for Roasted Broccoli and Cauliflower

    • Organic Broccoli and Cauliflower - if you can afford organically grown vegetables, you'll minimize your chemical exposure and enhance your overall wellness.
    • Olive Oil - We love the rich flavor of olive oil here, but feel free to use avocado oil if you prefer a more neutral taste.
    • Salt and Pepper - We test all of our recipes with Diamond Crystal Kosher Salt, which dissolves easily and is about ½ as salty as regular kosher salt, so please adjust accordingly!
    • Spices and Herbs (optional) - consider this basic recipe a blank canvas that you can customize to suit your taste. For variety, try smoked paprika, garlic powder, chipotle powder, cumin, curry powder, dried herbs like oregano or rosemary, or whatever sounds good to you.

How to Cook Roasted Broccoli and Cauliflower

    1. Pre-heat oven to 450°F.
    2. Prep the broccoli and cauliflower by cutting them into bite-sized florets, washing, and drying.
    3. Place the florets on a baking sheet (affiliate link) and drizzle with the olive oil, salt, and pepper. Toss to coat.
    4. Arrange the florets on the baking sheet, leaving some space between each floret to allow them to brown properly.
    5. Bake for approximately 20 minutes, or until the edges become lightly brown and crispy (as shown at the top of this post).

Not all salt is equal. We test all our recipes with Diamond Crystal Kosher salt, (affiliate link). The flaky crystals dissolve more readily than regular table salt or other kosher salts, making it easier to use. Note that Diamond Crystal Kosher salt is about half as salty as most other salts, so adjust accordingly when substituting!
