This Stuffed Baked Sweet Potato with Mexican flavors balances protein, fiber, and healthy fats in one nourishing meal. This recipe, as well as all our other recipes, is great for anyone with insulin resistance, prediabetes, or diabetes.
Flavor-packed roasted sweet potatoes are filled with taco-style ground beef, corn, creamy avocado, and a dollop of Greek yogurt for a complete meal that supports steady energy and blood sugar balance.

We love the flavor contrast between the sweet potatoes and the savory beef mixture. And if you like texture as much as we do, you'll love the variety of toppings that combine crunch and creaminess. It's a party in your mouth, and it's one of Jackelin's favorite simple weekday meals. Let's dig in.
Why it's Blood Sugar Friendly
Sweet potatoes often get labeled as “too high in carbs,” but when paired thoughtfully, they can absolutely fit into an insulin resistance-friendly meal.
Here’s why this recipe works:
- The protein from the ground beef and yogurt is not only filling, but also slows down glucose absorption
- Contains fiber-rich carbohydrates from sweet potatoes, onions, corn, and avocado; fiber also helps slow down glucose absorption
- Healthy fats from avocado and avocado oil support insulin sensitivity
- Portion-conscious and satisfying - you'll be surprised just how filling half a sweet potato can be once you add the beef and toppings
Ingredients for Stuffed Baked Sweet Potato

- Sweet Potatoes - Naturally rich in fiber and antioxidants, sweet potatoes provide complex carbohydrates that digest more slowly than refined starches. Read this study about how fiber lowers the glycemic response of meals, even when combined with other therapies like metformin.
- Grass-fed, Lean Ground Beef - A high-quality protein source that helps blunt blood sugar response and keeps you full longer.
- Avocado - Provides heart-healthy monounsaturated fats that support insulin sensitivity and add delicious creaminess (one of our favorite textures).
- Greek Yogurt - A great, protein-rich swap for sour cream that adds tang and creaminess while supporting blood sugar stability. Don't knock it 'til you try it!
- Shredded Cheddar Cheese - for melty goodness.
- Onion and Corn - These add natural sweetness, fiber, texture, and flavor.
- Cumin, Chipotle, and Garlic Powder are common Mexican flavors that add authentic flavor to this taco-style beef.
Ingredient Swaps and Substitutions for Stuffed Baked Sweet Potato
- Ground turkey or ground chicken can replace ground beef.
- Smoked paprika or sweet paprika instead of chipotle powder for a less spicy flavor.
- Shredded Monterey Jack or Pepper Jack cheese instead of cheddar.
- Diced green pepper instead of corn.
- A regular potato can be used instead of a sweet potato. Sweet potatoes have a little bit more fiber than regular potatoes.
How to Make Stuffed Baked Sweet Potatoes
Here's a quick overview of how to make stuffed baked sweet potatoes. To make weekday cooking more efficient, we suggest meal prepping by baking the sweet potatoes and cooking the beef ahead of time.
- Roast the sweet potatoes: Line a baking sheet (affiliate link) with parchment. Poke the sweet potatoes all over with a fork. Lightly spray or rub the skins with olive oil and sprinkle with salt. Bake 40-60 minutes at 400°F, depending on size.

- Cook the beef filling: Cook diced onions until softened. Add ground beef, spices, salt, and pepper. Add frozen corn.

- Prep the toppings
- Assemble - slice sweet potatoes in half lengthwise. Top each potato half with ¼ of the beef mixture and the toppings. Serve and enjoy!

Common Questions
Yes. Portion size and pairing matter most. When combined with protein, fiber, and healthy fats — like in this recipe — sweet potatoes can fit well into a diet that promotes reduced insulin resistance and blood sugar levels.
Absolutely! Baking the sweet potatoes (while you're doing something else for an hour) and pre-cooking the beef mixture saves a ton of time. Then all you have to do is assemble each sweet potato portion.
Yes! Stored in an airtight container in the freezer, the beef will keep for up to 3 months. Thaw in the refrigerator overnight and reheat.
We prefer reheating it in a skillet until heated through, but you can use the microwave if you prefer. Add a little water to the beef mixture while heating if it's a bit dry.
Place the sliced sweet potatoes in the microwave and reheat using one-minute bursts until heated through.
